  • 2 teaspoons paprika
  • 1 whole bay leaf
  • 4 cups chicken or vegetable stock

  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Rinse the dried beans under cold water and place them in a large bowl. Cover with water and soak overnight, or for at least 8 hours.

Drain the soaked beans and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chorizo slices and cook until browned, about 5 minutes. Remove the chorizo and set aside, leaving the rendered fat in the pot.

Add the chopped onion to the pot and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
