Ingredients

  • 6 medium-sized Russet potatoes
  • 500 grams Ground lamb or beef
  • 3 tablespoons Olive oil
  • 1 piece Large onion, diced
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 400 grams Crushed tomatoes
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 100 grams Grated Parmesan cheese
  • 1 tablespoon Butter, for greasing

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and thinly slice the potatoes (about 1/8-inch thick) and set them aside in a bowl of cold water to prevent browning.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3 minutes.

Step 4

Add the minced garlic and cook for another 1-2 minutes, stirring to avoid burning.

Step 5

Increase the heat to medium-high and add the ground lamb or beef. Cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

Step 6

Stir in the tomato paste, crushed tomatoes, smoked paprika, cumin, oregano, salt, and black pepper. Reduce the heat to low and let it simmer for 10 minutes. Stir occasionally.

Step 7

Grease a 9x13-inch (23x33 cm) baking dish with butter.

Step 8

Drain and pat the sliced potatoes dry. Layer one-third of the potato slices on the bottom of the baking dish, slightly overlapping them.

Step 9

Spread one-third of the meat and tomato mixture over the potato layer.

Step 10

Repeat two more layers of potatoes and meat mixture, finishing with a top layer of potatoes.

Step 11

Drizzle the remaining 1 tablespoon of olive oil over the top and cover the dish with aluminum foil.

Step 12

Bake in the preheated oven for 45 minutes.

Step 13

Remove the foil, sprinkle the grated Parmesan cheese evenly over the top, and bake uncovered for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.

Step 14

Garnish with fresh chopped parsley and serve hot.
