  • 300 grams Portuguese sausage (chorizo or linguiça)
  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano
  • 1.5 cups long-grain rice
  • 3 cups chicken stock
  • 2 tablespoons tomato paste
  • 1 piece bay leaf
  • 1 teaspoon or to taste salt
  • 0.5 teaspoon or to taste black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Slice the Portuguese sausage into thin rounds.

Heat a large, heavy-bottomed pot or deep skillet over medium heat. Add the olive oil.

Add the sliced sausage to the pot and cook for 4–5 minutes, stirring occasionally, until browned and slightly crispy. Remove the sausage from the pot and set aside.

In the same pot, add the diced onion and cook for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook for 1 minute, being careful not to burn it.

Add the diced red bell pepper, paprika, and dried oregano. Sauté everything for another 2–3 minutes until fragrant and the bell pepper begins to soften.
