In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes, or until the mixture is frothy.
In a large mixing bowl, combine the all-purpose flour and salt.
Add the frothy yeast mixture and olive oil to the dry ingredients. Mix until the dough starts to come together.
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until smooth and elastic.
Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Once proofed, punch down the dough to release air. Divide it into 10 equal portions and shape each piece into an oval or round roll.
Place the shaped rolls on a baking sheet lined with parchment paper, leaving space between each roll.
Lightly dust the rolls with flour and cover them with a towel. Allow them to rise again for about 30-40 minutes, or until they have puffed up.
Preheat your oven to 220°C (425°F).
Just before baking, brush the tops of the rolls with milk to enhance browning.
Bake the rolls in the preheated oven for 18-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
Allow the rolls to cool slightly before serving. Enjoy them fresh or use them as sandwich buns!
