Ingredients

  • 1 medium, finely chopped Yellow onion
  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 2 Bay leaves
  • 4 cups Chicken broth
  • 2 cups Long-grain white rice
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 1 cup, chopped Peeled tomatoes

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and sauté for about 5-7 minutes until the onions are translucent.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Mix in the tomato paste and chopped peeled tomatoes, cooking for about 2-3 minutes while stirring occasionally.
