  • 1 large red bell pepper, diced
  • 400 g canned chopped tomatoes
  • 125 ml dry white wine
  • 1 tsp paprika (preferably smoked)
  • 0.5 tsp ground cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 lemon, cut into wedges (for serving)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium heat. Add the sliced chorizo and cook for 3–4 minutes, or until it begins to release its oils and turns slightly crispy. Remove the chorizo with a slotted spoon and set it aside.

Step 2

In the same pan, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook for 5 minutes until softened and translucent.

Stir in the minced garlic and diced red bell pepper. Cook for another 3–4 minutes, or until the bell pepper begins to soften.
