Ingredients

  • 6 medium Yukon Gold potatoes
  • 1 small Red onion
  • 1 Green bell pepper
  • 0.25 cup Flat-leaf parsley
  • 0.5 cup Black olives
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Hard-boiled eggs

Directions

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil.

Step 2

Peel the Yukon Gold potatoes and cut them into bite-sized chunks.

Step 3

Add the potato chunks to the boiling water and cook for 12-15 minutes, or until tender when pierced with a fork. Drain and set aside to cool slightly.
