Ingredients

  • 500 grams pork shoulder
  • 1 kilogram fresh clams
  • 3 tablespoons olive oil
  • 4 pieces garlic cloves
  • 1 medium onion, finely chopped
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 200 milliliters white wine
  • 1 teaspoon paprika
  • 1 teaspoon sweet smoked paprika
  • 2 pieces bay leaves
  • 3 tablespoons fresh cilantro, chopped
  • 4 pieces lemon wedges (for serving)
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground

Directions

Step 1

Cut the pork shoulder into 2-3 cm cubes and season with salt, black pepper, paprika, and sweet smoked paprika. Set aside to marinate for 15 minutes.

Step 2

Soak the clams in cold salted water for 20 minutes to help remove sand. Rinse and drain them well.

Step 3

Heat 2 tablespoons of olive oil in a large, deep pot over medium-high heat. Add the pork and sear on all sides until golden brown. Remove the pork and set aside.

Step 4

In the same pot, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until softened and fragrant, about 5 minutes.

Stir in the tomato paste and cook for 2 minutes to deepen the flavor. Then add the canned diced tomatoes, white wine, and bay leaves. Bring to a simmer.

Add the rinsed clams to the pot, cover, and cook for an additional 8-10 minutes, or until all the clams have opened. Discard any clams that do not open.
