  • 4 large ripe tomatoes
  • 1 medium red bell pepper
  • 3 cloves garlic cloves

  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Slice the tomatoes in half and place them cut side down on a baking sheet. Leave the bell pepper whole.

Peel the garlic cloves and set them aside.

Brush the tomatoes, bell pepper, and garlic cloves lightly with 1 tablespoon of olive oil.

Place the tomatoes cut side down and the whole bell pepper on the grill. Grill for 5-7 minutes, or until the tomatoes develop grill marks and soften.
