  • 6 cups, finely shredded kale
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika
  • 2 cups (optional, if a thinner soup is desired) water
  • 1 loaf, for serving (optional) fresh bread

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Add the diced onion and sauté for 3–4 minutes until softened and translucent.

Stir in the minced garlic and cook for an additional 1–2 minutes until fragrant.

Add the peeled and diced potatoes to the pot, stirring to coat them in the oil.

Pour in the chicken or vegetable stock, and bring the mixture to a boil over high heat.

Reduce the heat to medium-low, cover the pot, and simmer for 15–20 minutes, or until the potatoes are fork-tender.
