Ingredients

  • 2 cups canned garbanzo beans (chickpeas), drained and rinsed
  • 1 whole garlic bulb
  • 4 tablespoons extra virgin olive oil
  • 1 red bell pepper, diced
  • 1 English cucumber, diced
  • 0.5 red onion, finely chopped
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh cilantro, chopped
  • 3 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 25 minutes or until the garlic is soft and golden.

While the garlic roasts, prepare the salad base. In a large bowl, combine the garbanzo beans, diced red pepper, cucumber, red onion, parsley, and cilantro.
