Ingredients

  • 4 pieces filet mignon steaks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic cloves, minced
  • 300 grams white mushrooms, sliced
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Start by patting the filet mignon steaks dry with a paper towel. Season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Sear the filet mignon steaks for 2-3 minutes on each side until a golden crust forms. Remove the steaks from the pan and set aside. (You’ll finish cooking them later.)

Step 3

In the same skillet, reduce the heat to medium and add butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and their moisture has evaporated.

Step 5

Deglaze the pan by pouring in the dry white wine. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the wine simmer for 3-4 minutes until slightly reduced.

Step 6

Stir in the heavy cream and cook for an additional 3-4 minutes, allowing the sauce to thicken slightly.

Step 7

Return the filet mignon steaks to the skillet and spoon the mushroom sauce over them. Cook for 4-6 minutes, depending on your preferred level of doneness (use a meat thermometer if needed).

Step 8

Sprinkle the dish with freshly chopped parsley and serve hot. Enjoy with a side of roasted potatoes or steamed vegetables for a complete meal.
