Ingredients

  • 250 grams All-purpose flour
  • 100 grams Granulated sugar
  • 75 grams Salted butter (softened)
  • 1 teaspoon Ground cinnamon
  • 2 large Egg yolks
  • 2 tablespoons Milk
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, ground cinnamon, and salt until evenly mixed.

Step 3

Add the softened butter to the dry mixture. Using your fingertips or a pastry cutter, rub the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk the egg yolks and milk together until combined. Pour this mixture into the flour and butter mixture.

Step 5

Using your hands, knead the dough gently until it comes together. The dough should be firm but pliable. If it's too dry, add an extra teaspoon of milk.

Step 6

Pinch off a small amount of dough (about the size of a walnut) and roll it into a rope about 10 cm (4 inches) long. Twist and shape the rope into random, irregular shapes to mimic the traditional rustic look of Raivas.

Step 7

Place the shaped cookies on the prepared baking sheets, leaving about 1-2 cm of space between each cookie.

Step 8

Bake the cookies in the preheated oven for 20-25 minutes, or until the edges are golden but the centers are still slightly soft.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve your Raivas cookies with coffee, tea, or enjoy them on their own!
