  • 1 pound chourico sausage
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 garlic cloves
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 15 ounces crushed tomatoes
  • 1 cup dry white wine
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the chourico sausage into 1/4-inch thick rounds.

Heat the olive oil in a large skillet over medium heat.

Add the sliced chourico and cook for 3–4 minutes until lightly browned. Remove the sausage with a slotted spoon and set aside.

Peel and thinly slice the yellow onion. Mince the garlic cloves. Core and slice the red and green bell peppers into thin strips.
