  • 4 cups Chicken or vegetable stock
  • 2 Bay leaves
  • 1 teaspoon Sweet paprika
  • 1 teaspoon Ground cumin
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro or parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the dried beans under cold water and soak them in a large bowl of water overnight, or for at least 8 hours. Drain and rinse before cooking.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chouriço or linguiça sausage, sliced into 1/4-inch rounds, and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

Step 3

In the same pot, add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the tomato paste to the pot and stir well, letting it cook for 1-2 minutes to develop its flavor. Then, pour in the tomato sauce and chicken or vegetable stock. Stir to combine.

After the beans have cooked for about an hour and are tender, return the browned sausage to the pot. Stir well and let it simmer with the beans for another 15-20 minutes to meld the flavors.

Remove the bay leaves before serving. Taste and adjust seasoning as needed.
