Ingredients

  • 1 pound smoked Portuguese sausage (linguiça or chorizo)
  • 1 piece ham hock
  • 8 cups water
  • 2 cups kidney beans, canned (drained and rinsed)
  • 1 cup tomato sauce
  • 1 large onion, chopped
  • 2 large carrots, peeled and sliced
  • 3 medium potatoes, peeled and cubed
  • 2 stalks celery stalks, chopped
  • 2 cups cabbage, chopped
  • 1 cup macaroni pasta
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional)

Directions

Step 1

Start by slicing the smoked Portuguese sausage into 1/4-inch-thick rounds.

Step 2

In a large stockpot, add the ham hock and water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 30 minutes to create a flavorful broth.

Step 3

Add the sliced sausage, kidney beans, and tomato sauce to the pot. Stir well and cook for another 15 minutes.

Step 4

Add the chopped onion, carrots, potatoes, celery, cabbage, and minced garlic to the pot. Stir to combine. Simmer for 25-30 minutes, or until the vegetables are tender.

Step 5

Add the macaroni pasta to the pot and continue simmering for 10-12 minutes, or until the pasta is cooked al dente.

Step 6

Season the soup with salt, black pepper, and optional paprika. Taste and adjust the seasoning as needed.

Step 7

Remove the ham hock from the soup. Strip any remaining meat from the bone, chop it into bite-sized pieces, and return it to the pot.

Step 8

Serve the soup hot, garnished with fresh parsley if desired. Enjoy with crusty bread for a complete meal.
