Ingredients

  • 4 pieces large eggs
  • 0.5 cups cooked white beans (such as cannellini or navy beans)

  • 2 tablespoons fresh parsley
  • 0.5 teaspoons smoked paprika
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons whole milk
  • 2 tablespoons grated Parmesan cheese (optional)

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper, and whisk thoroughly until the mixture is smooth and slightly frothy.

Step 2

Peel and finely chop the garlic cloves. Chop the fresh parsley, reserving a small amount for garnish.

Step 3

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the chopped garlic and sauté for about 30-40 seconds until fragrant but not browned.

Add the cooked white beans to the skillet and sprinkle the smoked paprika over them. Cook for 2-3 minutes, stirring occasionally, to warm the beans and coat them in the garlic and paprika flavors.
