Ingredients

  • 4 large caps, diced portobello mushrooms
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 2 medium, peeled and sliced carrots
  • 2 chopped celery stalks
  • 2 medium, peeled and diced potatoes
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onions and sauté for 3-4 minutes, until they become soft and translucent.

Stir in the minced garlic and cook for 1 minute, until fragrant.

Add the diced portobello mushrooms to the pot and cook for 5-7 minutes, until they release their juices and begin to brown.
