Ingredients

  • 12 ounces lo mein noodles
  • 1 pound boneless skinless chicken breast
  • 8 ounces Portobello mushrooms
  • 1 large carrot
  • 1 medium red bell pepper
  • 4 stalks green onions
  • 3 cloves garlic cloves
  • 0.25 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Cook the lo mein noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 2

Slice the chicken breast into thin strips and season with ground black pepper.

Step 3

Clean the Portobello mushrooms with a damp paper towel, remove stems, and slice into thin strips.

Step 4

Peel the carrot and julienne it into thin matchstick-like strips. Slice the red bell pepper into thin strips and chop the green onions into 1-inch pieces. Mince the garlic cloves.

Step 5

In a small bowl, combine soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and water. Mix until the cornstarch is fully dissolved, and set aside.
