Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (cold, diced)
  • 4 tablespoons Ice water
  • 2 cups Canned pumpkin puree
  • 0.75 cups Granulated sugar
  • 0.25 cups Brown sugar (packed)
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground ginger
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 3 Large eggs
  • 1 cups Heavy cream
  • 0.5 cups Whole milk
  • 1 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

To make the pie crust: In a large mixing bowl, combine the all-purpose flour and salt. Add the cold diced butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

Step 3

Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to a 9-inch pie dish and trim off any excess. Crimp the edges as desired. Place the crust in the freezer for 10 minutes while you prepare the filling.

Step 5

To make the filling: In a large mixing bowl, whisk together the canned pumpkin puree, granulated sugar, brown sugar, ground cinnamon, ground ginger, ground nutmeg, and salt.

Step 6

In a separate bowl, lightly beat the eggs. Add the eggs, heavy cream, whole milk, and vanilla extract to the pumpkin mixture. Whisk until smooth and fully combined.

Step 7

Pour the filling into the prepared pie crust. Smooth the top with a spatula.

Step 8

Bake the pie in the preheated oven for 15 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for 45 minutes, or until the filling is set and only slightly jiggly in the center.

Step 9

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to fully set.

Step 10

Serve the pie at room temperature or chilled. Garnish with whipped cream, if desired.
