Ingredients

  • 3 pounds Beef chuck roast
  • 4 cups Beef broth
  • 1 packet Dry Italian dressing mix
  • 2 teaspoons Italian seasoning
  • 2 teaspoons Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoons Crushed red pepper flakes
  • 1 cup Jarred mild or spicy giardiniera
  • 1 cup Jarred roasted sweet peppers, sliced
  • 6 pieces Italian rolls
  • 2 tablespoons Unsalted butter

Directions

Step 1

In a large slow cooker, combine the beef broth, dry Italian dressing mix, Italian seasoning, garlic powder, onion powder, and crushed red pepper flakes. Stir to combine.

Step 2

Place the beef chuck roast into the slow cooker, ensuring it is mostly submerged in the liquid.

Step 3

Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and easily shredded.

Step 4

Once the beef is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix it with the cooking liquid.

Step 5

Lightly toast the Italian rolls by spreading butter on the cut sides and broiling them for 1-2 minutes until lightly golden.

Step 6

Using tongs, pile the shredded beef onto the bottom half of each toasted roll. Be sure to include some of the cooking liquid for added flavor and moisture.

Step 7

Top the beef with a generous serving of giardiniera and roasted sweet peppers.

Step 8

Close the sandwich with the top half of the roll and serve immediately. For an authentic touch, you can dip the entire sandwich into the remaining cooking liquid before serving.
