Ingredients

  • 225 grams unsalted butter
  • 175 grams light brown sugar
  • 250 ml porter beer
  • 100 grams raisins
  • 100 grams sultanas
  • 100 grams currants
  • 50 grams mixed peel
  • 50 grams chopped walnuts
  • 275 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 large eggs
  • 1 zest of an orange
  • 1 zest of a lemon

Directions

Step 1

Preheat the oven to 160°C (320°F) and lightly grease a 20cm (8-inch) round cake tin. Line the base and sides with parchment paper.

Step 2

In a medium saucepan, combine the butter, sugar, and porter beer. Heat gently over medium heat, stirring, until the butter melts and the sugar dissolves.

Add the raisins, sultanas, currants, mixed peel, and orange and lemon zest to the saucepan. Stir well and bring the mixture to a gentle simmer. Let it simmer for 2 minutes. Remove from heat and allow the mixture to cool slightly.

In a large mixing bowl, sift together the flour, baking powder, cinnamon, and nutmeg.
