Directions

Step 1

Place the egg yolks in a medium-sized bowl and whisk them together with the Dijon mustard and 1 tablespoon of white wine vinegar until smooth.

While continuously whisking, drizzle in the vegetable oil very slowly at first, drop by drop, to create an emulsion. Once the mixture begins to thicken, you can add the oil in a steady stream while whisking vigorously.

When all the oil is incorporated, slowly whisk in the water to adjust the consistency, making the sauce slightly lighter and smoother.

Mix in the remaining tablespoon of white wine vinegar, finely minced shallot, and chopped tarragon. Stir well to combine.
