Ingredients

  • 4 pieces Portobello mushroom caps
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Soy sauce
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 4 pieces Burger buns
  • 4 pieces Lettuce leaves
  • 4 slices Sliced tomato
  • 4 slices Sliced red onion
  • 4 pieces Cheese slices (optional)
  • 4 tablespoons Mayonnaise
  • 4 teaspoons Mustard

Directions

Step 1

Clean the portobello mushroom caps by wiping them with a damp paper towel and gently removing the stems.

Step 2

Prepare the marinade by whisking together the olive oil, balsamic vinegar, soy sauce, minced garlic, dried thyme, salt, and black pepper.

Step 3

Place the mushroom caps in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let them marinate for 10-15 minutes, flipping halfway through.

Step 4

Preheat a grill or grill pan over medium heat.

Step 5

Grill the mushrooms for about 4-5 minutes per side, basting with any leftover marinade, until tender and slightly charred.

Step 6

If using cheese, place a slice on each mushroom cap during the last minute of grilling to allow it to melt.

Step 7

Toast the burger buns on the grill for about 1-2 minutes, until lightly golden.

Step 8

Assemble the burgers by spreading mayonnaise and mustard on the bottom halves of the buns.

Step 9

Add a lettuce leaf, a grilled mushroom cap, a slice of tomato, a slice of red onion, and any additional desired toppings.

Step 10

Cover with the top half of the bun and serve immediately.
