Ingredients

  • 8 pieces Baby Portobello mushrooms (stems removed)
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Garlic powder
  • 4 pieces Mini burger buns
  • 2 tablespoons Mayonnaise
  • 1 teaspoons Dijon mustard
  • 4 pieces Lettuce leaves (small)
  • 4 pieces Tomato slices
  • 4 pieces Cheese slices (optional, cut to fit bun size)

Directions

Step 1

Clean the baby portobello mushrooms with a damp paper towel and remove the stems.

Step 2

In a bowl, mix the olive oil, salt, black pepper, and garlic powder. Brush this mixture all over the mushrooms, including the insides.

Step 3

Preheat a skillet or grill pan over medium heat.

Step 4

Place the mushrooms cap-side down on the skillet and cook for 4-5 minutes. Flip and cook for an additional 3-4 minutes until tender and slightly browned. Remove from heat and set aside.

Step 5

Lightly toast the mini burger buns on the same skillet for about 1 minute until golden brown.

Step 6

In a small bowl, mix mayonnaise and Dijon mustard. Spread this mixture on the inside of each bun half.

Step 7

Assemble the burgers by layering a lettuce leaf on the bottom bun, followed by a cooked mushroom cap, a tomato slice, and a slice of cheese (if using). Top with the other half of the bun.

Secure each burger with a toothpick, if necessary, to hold the layers in place.
