Ingredients

  • 4 pieces Portabella mushroom caps
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar

  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Whole-wheat pita bread
  • 2 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 3 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley

Directions

Step 1

Clean the portabella mushroom caps with a damp paper towel and remove the stem.

Step 2

In a small bowl, whisk together 2 tablespoons of olive oil, balsamic vinegar, minced garlic, oregano, salt, and black pepper to create a marinade.

Place the mushroom caps in a shallow dish and pour the marinade over them. Let them marinate for 10 minutes, flipping halfway through.
