Ingredients

  • 2 large Portabella mushroom caps
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 2 Garlic cloves, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 Ciabatta rolls or sandwich bread
  • 6 large Fresh basil leaves
  • 1 Tomato, thickly sliced
  • 4 ounces Mozzarella cheese, sliced
  • 2 tablespoons Mayonnaise (optional)
  • 1 cup Mixed greens or arugula (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Clean the portabella mushroom caps with a damp paper towel. Remove the stems, if any, and pat them dry.

Step 3

In a small bowl, mix the olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Step 4

Brush both sides of the portabella mushrooms generously with the olive oil mixture. Place them on the prepared baking sheet, gill side up.
