Ingredients

  • 4 large caps Portabella mushrooms
  • 4 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 cup Parmesan cheese
  • 1 cup Breadcrumbs
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Remove the stems from the portabella mushrooms and gently scrape out the gills with a spoon. Wipe the mushroom caps clean with a damp paper towel and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 4

Mince the garlic cloves and add them to the skillet, cooking for about 1 minute until fragrant.

Step 5

Add the fresh spinach to the skillet and sauté until wilted, about 3 minutes. Season with a pinch of salt and black pepper.

Step 6

Remove the skillet from heat and transfer the spinach to a bowl. Mix in the breadcrumbs and half of the parmesan cheese (1/2 cup).

Step 7

Brush the mushroom caps lightly with the remaining olive oil on both sides. Place them gill side up on a baking sheet lined with parchment paper.

Step 8

Evenly distribute the spinach mixture into the mushroom caps, packing it down gently.

Step 9

Sprinkle the remaining parmesan cheese on top of each stuffed mushroom and dot each one with small pieces of butter.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the topping is golden brown.

Step 11

Remove from the oven and allow them to cool slightly before serving. Serve warm as a delightful appetizer.
