Ingredients

  • 1 cup Jasmine rice
  • 1 can Coconut milk
  • 2 cups Whole milk
  • 0.3333 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 0.5 cup Raisins (optional)
  • 0.5 teaspoon Lime zest
  • 1 tablespoon Unsalted butter

Directions

Step 1

Rinse the jasmine rice under cold running water until the water runs clear to remove excess starch.

Step 2

In a medium-sized heavy-bottomed saucepan, combine the coconut milk, whole milk, brown sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt. Place the pan over medium heat and stir to combine.

Step 3

Add the rinsed jasmine rice to the saucepan and bring the mixture to a gentle simmer, stirring occasionally to prevent the rice from sticking to the bottom of the pan.

Step 4

Once the mixture begins to simmer, reduce the heat to low. Cover the saucepan and let the rice cook for 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened to a pudding-like consistency.

Step 5

If you are using raisins, stir them into the pudding during the last 5 minutes of cooking.

Step 6

Remove the saucepan from heat and stir in the lime zest and unsalted butter until fully incorporated.

Step 7

Let the rice pudding cool for a few minutes before serving. Serve warm or chilled, garnished with an extra sprinkle of cinnamon or a small dollop of whipped cream, if desired.
