Ingredients

  • 500 grams Cherry tomatoes
  • 2 tablespoons Olive oil
  • 100 milliliters Port wine
  • 3 cloves Garlic cloves
  • 4 sprigs Fresh thyme
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 teaspoon Honey
  • 1 tablespoon Balsamic vinegar

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Wash the cherry tomatoes and pat them dry with a clean kitchen towel.

Step 3

In a large baking dish, drizzle the olive oil evenly to coat the bottom.

Step 4

Place the cherry tomatoes in the baking dish and toss them gently to coat them in the oil.

Step 5

Peel and thinly slice the garlic cloves, then scatter the slices over the tomatoes.

Step 6

Add the fresh thyme sprigs to the dish, tucking them lightly among the tomatoes.

Step 7

Season the tomatoes with salt and freshly ground black pepper.

Step 8

In a small bowl, mix the port wine, honey, and balsamic vinegar until well combined. Pour the mixture evenly over the tomatoes.

Step 9

Gently toss the tomatoes again to ensure they are well coated with the liquid and seasonings.

Step 10

Place the baking dish in the preheated oven and roast for 30-35 minutes, or until the tomatoes are soft, starting to blister, and the liquid has slightly reduced into a glossy sauce.

Step 11

Remove the dish from the oven and let it cool for 5 minutes before serving.

Step 12

Serve warm as a side dish, over crusty bread, or toss with cooked pasta for a simple yet indulgent meal. Enjoy!
