In a mixing bowl, combine the ground pork, 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, 2 sliced green onions, minced garlic, grated ginger, salt, and white pepper. Mix until well blended.
Set up your workstation for wrapping wontons. Place wonton wrappers on a clean surface and keep a small bowl of water nearby for sealing.
Spoon about 1 teaspoon of the pork filling onto the center of each wonton wrapper. Moisten the edges of the wrapper with water using your fingertip.
Fold the wrapper diagonally to form a triangle, pressing the edges firmly to seal. Bring the two bottom corners of the triangle together and press to seal into the classic wonton shape. Repeat until all the filling is used.
Bring a large pot of water to a boil. Gently drop the wontons into the boiling water in batches. Cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
In a separate pot, bring the chicken broth to a boil. Add 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and sliced carrot if using. Simmer for 3-4 minutes until the carrot is tender.
Add halved baby bok choy to the broth and cook for another 2-3 minutes until just tender.
Gently add the cooked wontons to the broth and heat through for 1-2 minutes.
Divide the soup among bowls and garnish with the remaining sliced green onions.
Serve hot and enjoy your Pork Wonton Soup!
