Ingredients

  • 1 pound Pork tenderloin
  • 1 medium, sliced Yellow onion
  • 1 medium, sliced Red onion
  • 3 stalks, chopped Green onions (scallions)
  • 3 minced Garlic cloves
  • 2 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Apple cider vinegar
  • 1 cup Chicken or vegetable broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley (optional, for garnish)

Directions

Step 1

Pat the pork tenderloin dry with paper towels, then season all sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the pork on all sides until golden brown, approximately 2-3 minutes per side. Remove the pork from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the sliced yellow and red onions and sauté for 5-6 minutes until softened and slightly caramelized.

Step 4

Stir in the minced garlic and cook for 1 minute, or until fragrant.

In a small bowl, whisk together the soy sauce, honey, apple cider vinegar, and chicken or vegetable broth. Pour the mixture into the skillet with the onions.

Return the seared pork tenderloin to the skillet. Spoon some of the liquid and onions over the top of the pork.

Reduce the heat to low, cover the skillet with a lid, and let the pork simmer for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

During the last 5 minutes of cooking, stir in the chopped green onions and allow them to soften slightly.

Remove the pork from the skillet and let it rest for 5 minutes before slicing it into medallions.

Step 10

Serve the pork medallions with the onion sauce spooned over the top. Garnish with fresh parsley, if desired.
