Ingredients

  • 500 grams pork tenderloin
  • 200 grams pineapple chunks (fresh or canned)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic cloves
  • 1 teaspoon ginger (grated)
  • 2 teaspoons cornstarch
  • 50 milliliters water
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks scallions (optional, for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)
  • 2 cups cooked rice (optional, for serving)

Directions

Step 1

Cut the pork tenderloin into bite-sized cubes, about 1-inch in size. Season the pieces with salt and black pepper, and set aside.

Step 2

If using fresh pineapple, peel and core the fruit, then cut it into small chunks. If using canned pineapple, drain the chunks and set aside.

Step 3

In a small bowl, mix together the soy sauce, honey, rice vinegar, grated ginger, and minced garlic. Stir to combine and set aside.

Step 4

In another small bowl, dissolve the cornstarch in water to create a slurry. This will be used to thicken the sauce later.

Step 5

Heat a large skillet or wok over medium-high heat and add the vegetable oil.

Step 6

Add the seasoned pork cubes to the skillet in a single layer. Cook for 3-4 minutes on each side until browned and fully cooked through. Remove the pork from the skillet and set it aside on a plate.

Step 7

In the same skillet, add the pineapple chunks and cook for 2 minutes, stirring occasionally, until they are lightly caramelized.

Step 8

Return the cooked pork to the skillet with the pineapple and pour in the prepared soy sauce mixture. Stir well to coat the pork and pineapple in the sauce.

Step 9

Reduce the heat to medium-low and simmer for 2-3 minutes to blend the flavors.

Step 10

Stir in the cornstarch slurry and cook for another 1-2 minutes until the sauce thickens. Remove from heat.

Step 11

Optional: Garnish with chopped scallions and sesame seeds for added flavor and presentation.

Step 12

Serve hot over cooked rice, or enjoy as is. Enjoy your delicious Pork with Pineapple!
