Ingredients

  • 4 pieces boneless pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 large leeks (white and light green parts only), sliced thinly
  • 2 cloves garlic, minced
  • 4 medium plums, pitted and quartered
  • 2 tablespoons honey
  • 1.5 tablespoons soy sauce
  • 0.5 cup chicken stock
  • 1 teaspoon fresh thyme, chopped

Directions

Step 1

Season both sides of the pork chops with salt and pepper. Set aside.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, sear the pork chops for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside. The pork does not need to be fully cooked at this stage.

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced leeks and cook for 4-5 minutes, stirring occasionally, until softened and fragrant.
