Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 medium Shallot (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Dry white wine
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream
  • 2 tbsp Fresh tarragon leaves (chopped)
  • 1 tsp Lemon juice

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the chopped shallot and garlic, cooking for 2-3 minutes until softened and fragrant.

Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Simmer for 2-3 minutes to reduce the wine slightly.
