Ingredients

  • 2 pieces (about 1 lb each) Pork tenderloin
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 2 tablespoons Olive oil
  • 2 cups Fresh cranberries
  • 1 cup Orange juice
  • 2 tablespoons Honey
  • 1 bunch (chopped) Fresh cilantro
  • 1 small (diced) Red onion
  • 1 small (seeded and finely chopped) Jalapeño pepper
  • 1 tablespoon Lime juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloins dry with paper towels. Rub them evenly with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and the ground cumin.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloins on all sides until golden brown, about 2-3 minutes per side.

Step 4

Transfer the skillet with the pork tenderloins to the preheated oven and roast for 18-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven, cover loosely with foil, and let rest for 5-10 minutes before slicing.

Step 5

While the pork is roasting, prepare the cranberry salsa. In a medium saucepan, combine the fresh cranberries, orange juice, and honey. Bring to a boil over medium-high heat, then reduce to a simmer and cook until the cranberries burst and the mixture thickens slightly, about 8-10 minutes. Let the mixture cool.

Step 6

In a mixing bowl, combine the cooled cranberry mixture with the chopped cilantro, diced red onion, chopped jalapeño, lime juice, and the remaining 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir to mix evenly.

Step 7

To serve, slice the pork tenderloins into medallions and arrange them on a platter. Spoon the cranberry salsa generously over the pork or serve it on the side.

Step 8

Enjoy your flavorful Pork with Cranberry Salsa!
