Directions

Step 1

Trim any excess fat from the pork loin and slice it into 1 cm (1/2 inch) thick medallions. Season both sides with salt and pepper.

Heat olive oil and butter in a large skillet over medium heat. Once hot, add the pork medallions in batches to avoid overcrowding the pan. Sear each side for 2-3 minutes until golden brown. Remove them from the pan and set aside on a plate.
