Ingredients

  • 2 pounds pork shoulder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 8 medium tomatillos, husked and quartered
  • 2 large poblano peppers, seeded and diced
  • 1 medium jalapeño, seeded and minced
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 0.5 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 4 medium radishes, thinly sliced (for garnish)
  • 1 medium avocado, diced (optional for garnish)
  • 1 cup tortilla chips (optional for garnish)

Directions

Step 1

Pat the pork shoulder dry with paper towels and cut it into 1-inch cubes. Season the pork with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

In a large soup pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed pork in batches, searing each side for 2-3 minutes until browned. Remove the browned pork and set aside on a plate.

Step 3

In the same pot, add the diced onion and sauté for 4-5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the tomatillos, poblano peppers, and jalapeño to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften and release juices.

Step 5

Return the browned pork to the pot. Add the chicken broth, oregano, cumin, and the remaining 1 teaspoon of salt. Stir to combine.

Step 6

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and cook for 60 minutes, stirring occasionally, until the pork is tender and the flavors are well blended.

Step 7

Taste the soup and adjust the seasoning if necessary. Stir in the chopped cilantro and lime juice right before serving.

Step 8

Ladle the soup into bowls and garnish with sliced radishes, diced avocado, and tortilla chips, if desired.

Step 9

Serve hot and enjoy this zesty and comforting Pork Verde Soup!
