  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 1 medium Shallot, finely chopped
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tbsp Dijon mustard
  • 2 tbsp Fresh tarragon, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels and season it evenly with salt and pepper.

Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 6 minutes.
