Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.25 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves minced garlic
  • 0.5 cup chicken broth
  • 1 tsp cornstarch
  • 1 tbsp water

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels. Rub it with 1 tablespoon of olive oil, then season all sides with salt, pepper, garlic powder, and paprika.

Step 3

Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes on each side until it’s golden brown.

Step 4

Transfer the skillet to the preheated oven and roast the pork tenderloin for 15-18 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest for 5-10 minutes before slicing.

Step 5

While the pork is roasting, prepare the sauce. In a small saucepan over medium heat, combine honey, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and chicken broth. Stir well and bring the mixture to a simmer.

Step 6

In a small bowl, mix the cornstarch and water to create a slurry. Slowly add the slurry to the sauce, whisking constantly. Cook for another 2-3 minutes until the sauce thickens.

Step 7

Slice the rested pork tenderloin into 1/2-inch medallions and arrange them on a serving platter.

Step 8

Drizzle the sweet and tangy sauce over the pork slices or serve it on the side for dipping. Enjoy!
