Ingredients

  • 1 lb pork tenderloin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 medium shallots
  • 2 cloves garlic cloves
  • 1 cup apple cider
  • 0.5 cup chicken stock
  • 1 tsp fresh thyme leaves
  • 2 tbsp heavy cream

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels. Season it all over with salt and black pepper.

Step 3

Heat a large oven-safe skillet over medium-high heat and add the olive oil.

Step 4

Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Transfer the skillet with the pork tenderloin to the oven and roast for 12-15 minutes or until the internal temperature reaches 145°F (63°C). Remove the pork from the skillet and let it rest on a cutting board.
