Ingredients

  • 1 piece (about 1.5 lbs) pork tenderloin
  • 6 medium (halved and pitted) plums
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves (minced) garlic
  • 1 teaspoon (chopped, plus extra sprigs for garnish) fresh thyme
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season the pork tenderloin with salt, black pepper, paprika, and cinnamon. Rub the seasoning evenly over the meat.

Step 3

In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the pork tenderloin on all sides until golden brown, about 2 minutes per side. Remove the pork from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for 1 minute until fragrant.
