Ingredients

  • 1 lb Pork tenderloin
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Fresh thyme
  • 2 tbsp Unsalted butter
  • 2 Garlic cloves, minced
  • 2 Ripe pears, cored and sliced
  • 1 cup Chicken broth
  • 2 tbsp Honey
  • 1 tbsp Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork tenderloin dry with paper towels and season generously with salt, black pepper, and 1 teaspoon of thyme.

Step 3

Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.

Step 4

In the same skillet, lower the heat to medium and add the butter. Once melted, stir in the minced garlic and cook until fragrant, about 30 seconds.

Step 5

Add the pear slices to the skillet and cook for 2-3 minutes, allowing them to soften and caramelize slightly. Stir in the remaining 1 teaspoon of thyme.

Step 6

Deglaze the skillet by pouring in the chicken broth, scraping the bottom to release any browned bits. Stir in the honey and apple cider vinegar.

Step 7

Return the pork tenderloin to the skillet, nestling it between the pears. Spoon some of the sauce over the pork.

Step 8

Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 9

Remove the skillet from the oven and let the pork rest for 5 minutes before slicing.

Step 10

Serve the pork sliced, alongside the caramelized pears and drizzled with the pan sauce.
