Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 3 tbsp dijon mustard
  • 2 tbsp whole grain mustard
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 2 tbsp butter
  • 1 shallot, finely minced
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels and season it evenly with salt, black pepper, and garlic powder.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

Step 4

Once the oil is hot, add the pork tenderloin and sear it on all sides until golden brown, about 3-4 minutes per side.

Step 5

Transfer the skillet with the pork to the preheated oven and roast for 12-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 6

Remove the skillet from the oven, transfer the pork to a cutting board, and tent it with foil to rest.

Step 7

In the same skillet over medium heat, melt the butter and add the minced shallot. Cook until softened, about 2-3 minutes.

Step 8

Deglaze the skillet by adding the chicken broth, scraping up any browned bits from the bottom of the pan.

Step 9

Stir in the Dijon mustard, whole grain mustard, and heavy cream. Simmer the sauce for 3-4 minutes, stirring occasionally, until slightly thickened.

Step 10

Slice the pork tenderloin into medallions and serve with the mustard sauce drizzled over the top.

Step 11

Garnish with fresh parsley, if desired, and enjoy!
