Ingredients

  • 1 pound Pork tenderloin
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves, minced
  • 8 ounces Button or cremini mushrooms, sliced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves (optional)
  • 1 teaspoon All-purpose flour (optional for thickening)
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels and season it evenly with salt and pepper on all sides.

Step 3

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Once hot, sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Step 4

Transfer the skillet with the pork tenderloin to the preheated oven. Roast for 12-15 minutes, or until the internal temperature reaches 145°F (63°C). Remove the pork from the oven and place it on a cutting board to rest, loosely covered with foil.

Step 5

In the same skillet, heat the remaining olive oil and butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Step 6

Add the sliced mushrooms to the skillet and sauté for 5-6 minutes, stirring occasionally, until they are golden and softened.

Step 7

Deglaze the skillet with chicken broth, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes.

Step 8

Reduce the heat to low and stir in the heavy cream. If you prefer a thicker sauce, whisk in 1 teaspoon of flour and cook for an additional 2-3 minutes until the sauce thickens.

Step 9

Optionally, add fresh thyme leaves for extra flavor and adjust seasoning with salt and pepper, if needed.

Step 10

Slice the rested pork tenderloin into medallions and arrange them on a serving platter. Spoon the mushroom sauce over the sliced pork.

Step 11

Garnish with chopped fresh parsley and serve immediately with your choice of sides, such as mashed potatoes or steamed vegetables.
