  • 2 cups Fresh mango, diced
  • 0.5 cup Red onion, finely chopped
  • 1 tbsp Fresh ginger, grated
  • 0.25 cup White vinegar
  • 2 tbsp Brown sugar
  • 0.25 tsp Ground cinnamon
  • 0.25 tsp Ground coriander
  • 1 tbsp Lime juice
  • 2 tbsp Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare the pork tenderloin by patting it dry with paper towels. Rub it all over with 1 tablespoon of olive oil, salt, black pepper, garlic powder, and ground cumin.

Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides for about 2 minutes per side until golden brown.
