Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup (diced) pineapple
  • 0.5 cup (diced) red bell pepper
  • 0.25 cup (diced) red onion
  • 2 tablespoons (chopped) cilantro
  • 1 tablespoon lime juice
  • 1 small (seeded and finely diced) jalapeño
  • 1 teaspoon honey

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a small bowl, mix together garlic powder, smoked paprika, ground cumin, salt, and black pepper.

Step 3

Pat the pork tenderloin dry with paper towels. Rub the pork with olive oil, then evenly coat it with the spice mixture.

Step 4

Heat a large, oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil and sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Step 5

Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove the pork from the oven, tent it with foil, and let it rest for 5-10 minutes.

Step 6

While the pork is in the oven, prepare the pineapple salsa. In a medium bowl, combine diced pineapple, red bell pepper, red onion, chopped cilantro, lime juice, diced jalapeño, and honey. Stir well to combine, and season with a pinch of salt if needed.

Step 7

Slice the rested pork tenderloin into medallions and arrange them on a serving platter.

Step 8

Spoon the fresh pineapple salsa over the sliced pork tenderloin and serve immediately. Enjoy!
