Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Olive oil
  • 0.5 cup Orange marmalade
  • 2 tbsp Chipotle peppers in adobo sauce
  • 1 tbsp Apple cider vinegar
  • 0.25 cup Low-sodium chicken broth
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim any excess fat or silver skin from the pork tenderloin. Pat it dry with paper towels, then season it evenly with salt and ground black pepper.

Step 3

In an oven-safe skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, sear the pork tenderloin on all sides until golden-brown, about 3-4 minutes per side.

Step 4

Transfer the skillet with the pork tenderloin to the preheated oven. Roast for 12-15 minutes, or until the internal temperature reaches 145°F (63°C) for medium doneness. Remove the pork from the oven, transfer it to a cutting board, and let it rest for 5-10 minutes.

Step 5

While the pork is resting, prepare the chipotle marmalade sauce. In the same skillet, remove any excess oil if necessary but leave the browned bits (fond).

Step 6

Set the skillet over medium heat and add the minced garlic. Sauté for 30 seconds or until fragrant.

Step 7

Add the orange marmalade, chipotle peppers in adobo sauce, apple cider vinegar, and chicken broth. Stir well to combine.

Step 8

Let the sauce simmer for 3-5 minutes, stirring occasionally, until it thickens slightly and coats the back of a spoon.

Step 9

Taste the sauce and adjust the seasoning if necessary. For added heat, you can blend more chipotle peppers.

Step 10

Slice the rested pork tenderloin into medallions about 1-inch thick and arrange them on a serving platter.

Step 11

Drizzle the chipotle marmalade sauce over the pork slices, and garnish with fresh cilantro if desired.

Step 12

Serve immediately with your favorite sides, such as roasted vegetables or mashed sweet potatoes.
