Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.25 cup Balsamic vinegar
  • 2 tbsp Honey
  • 1 cup Fresh or frozen cranberries
  • 1 tsp Thyme leaves, fresh or dried
  • 1 tsp Cornstarch
  • 1 tbsp Water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the pork tenderloin with salt and black pepper on all sides.

Step 3

In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the pork tenderloin for 2-3 minutes on each side until it is golden brown all around.

Step 4

Transfer the skillet with the seared pork to the preheated oven. Roast for 18-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Once done, remove the pork from the skillet and let it rest on a cutting board, tented with foil, for 5-10 minutes.

Step 5

While the pork is in the oven, prepare the balsamic cranberry sauce. In a medium saucepan over medium heat, add the minced garlic and sauté for 1 minute until fragrant.

Step 6

Pour in the chicken broth, balsamic vinegar, and honey, and stir to combine. Bring the mixture to a simmer.

Step 7

Add the cranberries and thyme leaves to the saucepan. Simmer the mixture for 5-7 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly.

Step 8

In a small bowl, mix the cornstarch and water to create a slurry. Gradually add this to the cranberry sauce while stirring to thicken it further.

Step 9

Taste and adjust seasoning, adding a pinch of salt or extra honey if needed for balance.

Step 10

Slice the rested pork tenderloin into 1-inch slices and arrange them on a serving platter.

Step 11

Spoon the balsamic cranberry sauce over the pork slices or serve it alongside as a dipping sauce. Enjoy!
