  • 2 cloves garlic cloves
  • 8 figs fresh figs
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme

Directions

Step 1

Trim any excess fat and silver skin from the pork tenderloin. Slice the pork into 1-inch-thick medallions.

Step 2

Season the pork medallions on both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the pork medallions in a single layer, being careful not to overcrowd the pan. Sear for 2-3 minutes on each side, until golden brown and cooked to an internal temperature of 145°F (63°C). Remove the medallions from the skillet and set them aside on a plate tented with foil to keep warm.
